Veggie & Potato bake

I made this "pretty healthy" side dish with yesterdays hamburger sliders. It was really good! I will be definitely be making this again with a few additions. Im going to add more veggies! Maybe some squash, or even thinly sliced carrots.

1 medium yellow onion, sliced thinly
2 garlic clove, minced or grated
3-4 medium potatoes, peels on and cleaned
4 medium zucchini
3 yellow squash
5-6 small to medium tomatoes
sea salt
freshly ground pepper 
dried thyme (or fresh thyme, if you have it)
1/2 cup of Gruyere (any harder cheese will work--Parmesan is good)

Preheat the oven to 375 degrees.


drizzle some olive oil in a pan and saute onions for about 8 minutes, until soft and carmalized. Add garlic and cook for another 2 minutes. Spread in the bottom of a greased 9 X 13 pan.



Slice all your veggies at about a 1/4 inch thick and arrange as pictured above. Drizzle with additional olive oil and sprinkle with salt, pepper & thyme. Cover and bake for 30 minutes @ 375.





Uncover and sprinkle with the 1/2 cup of cheese. Bake an additional 30 minutes and serve warm!
